This is one of our favorite quick-and-easy recipes, that’s delicious and healthy too!
The recipe is originally from “Peas and Thank You” but I don’t follow it 100%.
Ingredients:
- BBQ Sauce
- Crushed Pineapple (I get it in 100% juice, no sugar added)
- Black Beans, drained
- Mozzarella
- Sage or Cilantro for garnish
- Tortillas or flatbreads
Pre-heat the oven to 375 degrees. Assemble your ‘pizzas:’ I do the BBQ sauce, then black beans, then pineapple, then mozzarella. Pop them in the oven on a cookie sheet for about 15 minutes, and then add your garnish.
Serve up and enjoy! It’s really that simple and delicious. Brendan is a huge BBQ fan so these satisfy that craving and makes both of us happy and full.
